Gumushane Sugar Beans

Registration Number: 472

Product Description and Distinctive Features:

Gümüşhane Sugar Bean (Phaseolus vulgaris L.) is a long-round white agricultural product grown in Gümüşhane city center and villages and Torul district center and villages, and its mature seed is consumed. The beans, which are cultivated and harvested with traditional methods, have a light floury, cottony, soft taste and high aroma resulting from heavy brewing, as well as early cooking and high swelling capacity. Gümüşhane Sugar Bean grows at an altitude of 800-1800 m and no artificial fertilizer or plant protection product can be used during its cultivation.

Gümüşhane Sugar Bean, unlike other beans, matures in a short time in the difficult conditions of the geography where it grows, without being exposed to cold climate conditions and frost. One of the most basic features that distinguishes Gümüşhane Sugar Bean from other beans is its growing period. Although the bean plant's maturation period is normally very long, Gümüşhane Sugar Bean has adapted to regional climate conditions and grows in a short vegetation period. Gümüşhane Sugar Bean completes its development in late April and early May when spring frosts end and in early September when autumn frosts have not yet begun. Gümüşhane Sugar Bean has a long, round physical appearance.

Seed length is 12.5-18.0 mm, seed diameter is 10.1-12.0 mm. Despite the short vegetation period and difficult climate conditions, the weight of 100 grains of Gümüşhane Sugar Bean varies between 60-95 g. Gümüşhane Sugar Bean has a high water absorption capacity of 0.7-1.5 g/grain, water absorption index is 1.0-1.15%, swelling capacity is 0.97-2.25 ml/grain and swelling index varies between 2-2.4%.

One of the most important features that distinguishes Gumushane Sugar Beans from other beans is the cooking time, which is 13-18 minutes. This is a very short time for dry beans. Gumushane Sugar Beans do not break down during normal cooking (except for the pulping process). The total protein of Gumushane Sugar Beans is between 25.5-28%. The presence of lemon-yellow spots in the hilum (navel) region of Gumushane Sugar Beans is the most important distinguishing feature in sensory detection. On the other hand, red coloration in the form of capillaries should not be visible on the grain shell and a similar coloration should not continue clearly on the fruit shell until harvest maturity.
