Product Description and Distinctive Features:

Gümüşhane Sironu is a traditional bakery product consumed as an appetizer, and is a local product consumed as a hot or cold appetizer, as desired.

Production Method: In the production of Gümüşhane Sironu, the composition of the dough is 1000 grams of flour, 0.5-0.6 liters of water and 5-10 grams of salt.

Gümüşhane Sironu is obtained by processing the flour into dough, turning it into yufka, partially cooking the yufka on specially designed iron sheets exposed to open flame, rolling (folding) 4-6 times and cutting it into 1-2 cm lengths. During the yufka cooking stage, the bottom of the baking sheet is plastered with a mud prepared from oak wood ashes for approximately 3-5 mm. After the mud dries, this sheet is used in production. Yufka is cooked on an open wood flame. The yufka feature must contain the following values.

Yufka thickness: Maximum 1.2 mm

Weight: 260-380 g / 100 pieces

Humidity: Maximum 17%

Ash amount: Maximum 3%

In Gümüşhane Siron, folded shapes should resemble rectangular prisms, not circular. The resulting sirons are placed side by side on wide trays in a shaded environment and dried for 1-2 days. The sirons, which are compressed and arranged side by side, resemble rectangular prisms. This product can be stored for 24 months without spoiling in a moisture-free environment. When the sirons are to be consumed, the product is placed flat on metal plates side by side and heated in ovens. Diluted yogurt or strained yogurt is spread over the sirons in a way that it covers them. Fried butter and walnut pieces are sprinkled on top of this and served optionally.
