Although Gümüşhane Kömesi is similar to walnut sausage produced in other regions, it has significant differences. While making Gümüşhane Kömesi, the content of the mixture in which the walnuts strung on threads are dipped is quite different. This content includes honey, milk, mulberry, sugar and flour. To obtain 100 kg of Gümüşhane Kömesi, at least 33 kg of walnuts, at least 14 kg of honey and at least 10 kg of milk are used. Milk and mulberry are obtained in this region. The skills of the masters of the Kömesi and the mulberry obtained from the rich flora of the region are important factors in the production and quality of Gümüşhane Kömesi.

Production Technique: Walnuts, mulberry, honey, flour, sugar and milk are used in the production of Kömesi. The walnuts strung on threads are strung in Kömesi. The mixture in which the walnuts strung on threads are dipped is prepared. Since the production is made from dry mulberry, the mulberry must definitely be washed. The washed mulberries are boiled in a cauldron and the must is drained. Some of the drained must is set aside to be whipped with flour, the remaining must is put into the herle cauldron and heated with honey and sugar. After it starts to boil, the separated must and the flour whipped with milk are poured into the cauldron and after cooking for a while, the mixture is ready. The walnuts strung on strings are dipped into the previously prepared mixture at least three times at two full day intervals, depending on the drying environment, and dried. The drying process is carried out in a hygienic environment.
